- Ingredients:
- 12–15 medium-sized spinach leaves (palak patta)
- ½ cup gram flour (besan)
- ½ tsp turmeric powder
- ½ tsp asafoetida (hing)
- ½ tsp red chilli powder
- 1 tsp fennel powder (saunf powder)
- ¼ tsp carom seeds (ajwain)
- 1 onion (finely chopped)
- Salt to taste
- Mint chutney
- 2–3 tbsp curd
- 3 tbsp sev
- Handful of coriander leaves
- Fresh pomegranate arils
Method:
- Separate the spinach leaves from the bundle, trim hard stems, and rinse thoroughly.
- Pat dry the leaves with a clean cotton cloth and set aside.
- In a bowl, mix gram flour with turmeric, asafoetida, red chilli powder, fennel powder, and carom seeds. Add water gradually to make
- a smooth, flowing batter. Add salt and whisk again.
- Dip each spinach leaf in the batter and place in an Airfryer at 180°C for 8–10 minutes until crispy.
- Place the crispy palak patta pakodi on a serving plate.
- Drizzle some green chutney and sprinkle finely chopped onions over the leaves.
- Add 2–3 tbsp of curd as preferred.
- Sprinkle chaat masala to taste.
- Top with sev and crushed papdi (optional).
- Garnish with coriander leaves and fresh pomegranate arils.
- Serve immediately for the best crunch and flavor.
